I cooked a turkey with my girl this past Thanksgiving and it came out really well. Here is the recipe and prep details that I followed.
Buy the following:
- Whole Turkey (we got a 12lber)
- 1 orange, 1 gratefruit, 2 lemons
- Meat Thermometer
- Brining Packet (Herbs, Salt, and Bag included)
- Turkey tray
- Basting sucker
Defrost the turkey and make sure you take out the giblets and neck. The turkey should be completely empty and thawed before you attempt to brine it. Place the turkey in the brining bag and add ice water and the brining mix. Make sure the bird is fully submerged. If the turkey is small you can use a few rubber bands to make the bag smaller. Brine the turkey for 1 hour for each pound. 12lbs turkey = 12 hour brining process.
Once the bird has brined for the required time period remove it from the brine. Filter out the herbs and set them asside. Combine the herbs with 1 stick of butter. Mash the butter until it is smooth and soft. Place an even spread of butter & herbs mixture under the skin of the turkey.
Instead of using stuffing I stuffed the turkey with fruit. I got the idea from a Food Network episode hosted by Danny Boome. Halve the lemons, orange, and gratefruit. Place each piece of fruit into the turkey lightly squeezing them to release the juices as you push them in.
- Preheat your oven to 450
- Place the turkey in the oven for 30 minutes at 450 then bring the oven down to 350.
- Cook until the meet thermometer reads 175-180…
